Process
- Crack open a hard-boiled egg. Peel the shell from the egg.
- Cut the egg in half the short way, across the middle, not from end to end.
- Remove cooked yolk from the egg and place it in the bowl. Crack, peel and cut the other hard-boiled eggs.
- Mash all the yolks with a fork. Add mayonnaise, mustard, pickle relish and salt to the yolks and mix well.
- Spoon yolk mixture into each egg white half to resemble an eyeball.
- Slice each olive in half with a knife.
- Place an olive on top of each egg to resemble the pupil and iris of an eye.
- Stuff each egg carton compartment with alfalfa sprouts. Place an eyeball on top of the sprouts in each egg carton compartment.
- To serve, place the egg carton on the table so guests can select eyeballs to munch.
