Summer Fruit Basket from Cooking Art

Ingredients:

ripe watermelon
any selection of ripe, tropical style fruits, such as:

melons, pineapple, kiwi, strawberries, orange sections, bananas, mango, papaya, star fruit

shredded coconut, optional

Utensils:

bamboo skewers
big spoon
paper towels
paring knife
cutting board
kitchen towel
bowl

Process:

1. Use a bamboo skewer or the point of the knife to score a basic basket shape with a handle on the watermelon. Cut on the scored line with a paring knife - like carving a pumpkin - to cut away the watermelon that is not part of the basket design. NOTE: This line can be cut straight, wiggly, scalloped or in any other design. Keep the handle fairly wide and thick so it will be strong. Be careful of slippery, sticky hands. Keep a towel handy to wipe knife and keep hands dry.
2. Scoop out all the pink, juicy watermelon and place it on the cutting board. Cut away any rind or seeds of the watermelon that are left.
3. Cut this watermelon into chunks and place chunks in the bowl.
4. Next, cut the other fruits into chunks, balls, slices or shapes and place them in the bowl with the watermelon. Let them sit while the juices and flavors mix.
5. Pat the inside of the watermelon "basket" dry with paper towels.
6. Scoop the fruit salad into the "basket," heaping it high above the sides of the basket. Sprinkle coconut on the top, if desired.
7. Set the basket of summer fruits on the table for a bright, juicy, refreshing fruit salad in its own basket, ideal for a buffet, party or picnic!
